I created this cheesecake in agreement with a
Ingredients (8-10 slices)
30 Spéculoos (or graham cracker with cinnamon) (
2 tablespoons butter (
10 ounces cream cheese (
2 cups Sour cream (
3/4 cup heavy whipping cream (20 cl)
3/4 cup integral cane sugar (
7 ounces black grapes (
4 tablespoon honey
½ teaspoon anise seeds
½ teaspoon cinnamon
1 star anise
Prep : 15 min Bake: 50 min
Preheat the oven to 300 ° F.
Mix Spéculoos crumbs with melted butter in a medium bowl, then press onto bottom of springform pan. Place in the refrigerator.
In a large bowl, mix cream cheese, with sour cream, heavy whipping cream and sugar, then mix in the eggs one at a time until smooth.
Pour filling into prepared crust.
Bake in preheated oven for 50 minutes in a bain marie (the springform pan in a bigger pan filled with boiling water).
Turn the oven off, and let cake cool in oven with the door closed, then chill in refrigerator for 12 hours.
Remove the cheesecake from the refrigerator 30 minutes before serving.
Cut the grapes in half (the larger ones).
Melt the honey over low heat, with spices. Mix and let reduce for a few minutes.
Remove the cloves then let cool, it will thicken.
Arrange the grapes on the cheesecake, pour the spicy honey and proudly serve your dessert.
